Posole
ingredients
- 2 T. vegetable oil
- 1/2 pound lean pork cut into 1 inch cubes
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 2-20oz cans hominy
- 2 cups chicken broth
- 2 cups of water
- 1 14oz can of green chili
- 1 T. crushed red pepper
- 1tsp. dried Mexican oregano or marjoram
- 1/2 tsp. cumin
directions
Saute pork in oil until brown. Add onion and garlic, cook until onion is translucent. Add hominy and rest of ingredients. Add more water if necessary to cover pork and hominy. Simmer for 45 minutes to an hour.
