Gourmet Hot Chocolate
ingredients
- 4 c. milk
- 1/4 c. sugar
- 1/2 tsp. vanilla (optional)
- 1/2 tsp. cinnamon (optional)
- 1/4 tsp. nutmeg (optional)
- 2 to 4 Tb. unsweetened baking cocoa powder
- or 2 squares (1 oz. each) unsweetened or semi-sweet baking chocolate
- or 1/3 c. semisweet chocolate chips/pieces
- Whipped cream or marshmallows (optional)

Place the milk in a medium-size saucepan. Over medium heat, scald the milk for two or three minutes (do not boil the milk, leave it on medium heat and simmer it). Remove the saucepan from the heat.

Add the sugar. Add the vanilla, and spices if desired (they are optional). Add the cocoa powder or chocolate, and cook on medium-low heat for three minutes longer. The amount of unsweetened cocoa powder will depend on the personal taste. Remove from the heat. Garnish with whipped cream or marshmallows, if desired, and serve warm.

Tip: Hot cocoa is generally called “hot cocoa” if it is made with cocoa powder (unsweetened bakers’ cocoa powder). Hot chocolate is called “hot chocolate” if it is made with real, melted chocolate.
