Tomato Corn and Bacon Salad
This salad has great color and great flavor. The bacon really boosts the flavors and the basil ties it all together.
ingredients
- 1 ear white corn
- 2 slices Bermuda onion diced
- 12-15 sweet 100 cherry tomatoes halved
- 3 slices bacon cooked and crumbled
- 1 tblsp. freash basil chopped
- 2 tblsp. olive oil
- 1 1/2 tsp. balsamic vinegar
- salt and pepper
directions
Cook corn in boiling water and cool. Cut kernels from cob. Toss all ingredients together in medium size bowl. Serve room temperature or slightly chilled.
