Molasses Spice Fudge Cookies
A spicy, soft on the inside old fashioned molasses cookie.
ingredients
- 1/2 Cup unsweetened butter
- 1 Tbsp. grated peeled fresh ginger
- 1/2 Cup packed brown sugar
- 1/4 Cup molasses\
- 1 Tsp. ground cinnamon
- 1+1/4 Tsp. ground ginger
- 1/4 Tsp. ground cloves
- 1/4 Tsp. ground nutmeg
- 1 Tsp. ground cardamon
- 1 Tbsp cocoa
- 1+1/2 Cup all purpose flour
- 1 Tsp. baking soda desolved in 1/2 Tsp. boiling water.
- 1 Cup semisweet chocolate chips
- 1/4 cup white sugar for rolling.

Preheat oven to 350°

Cream butter, ginger and brown sugar. Add molasses, cinnamon, ginger, cloves, nutmeg, cardamon, and cocoa, cream together with butter sugar mix.

Add flour a little at a time, add baking soda desolved in water and blend till combined. Stir in chocolate chips. Place dough in platic wrap and refrigerate for 2 hours or overnite.

Preheat oven to 350.

Break off pieces of dough and roll into walnut size balls. Roll in sugar and place on parchment lined baking sheet. Careful that they don’t roll off cookie sheet when placing in oven. Bake for 12-14 minutes or till cracks form on cookie. Remove from cookie sheet and cool.
