Christmas Yule Log (Bûche de Noël)

Prep and cook time: “About 2 hours plus about 50 minutes to chill” [don’t believe this, allow 3 days]. This is a lot of work, but makes a pretty centerpiece for a Christmas buffet table.

ingredients

  • 1 1/2 cups hazelnuts
  • 5 large eggs yolks
  • 1 1/3 cups granulated sugar
  • About 1 cup (1/2 lb.) cold butter, cut into chunks
  • 4 ounces semisweet chocolate
  • 6 Tablespoons hazelnut-flavor liqueur (or raspberry if that’s what you have)
  • 5 large eggs
  • About 1/4 cup all-purpose flour
  • 1 1/2 teaspoons vanilla
  • 1 cup whipping cream
  • 2 Tablespoons powdered sugar.

To make ahead, follow these steps: -Up to 3 days ahead, make butter creams, cover, and chill -Up to 2 days ahead, make cake, let cool, wrap airtight and hold at room temperature -Up to 1 day ahead, shape dessert, cover, and chill
