Our Famous Pizza
ingredients
- Pizza Dough
- Packaged pizza mix-or get ready made dough from Pizzeria
- 2 tablespoons honey -two good squeezes of the bear :)
- 2 teaspoons of caraway seeds
- flour- as needed
- Toppings
- 1 large onion
- 1/2 large red or yellow pepper
- 5 cloves roasted garlic
- 2 large mushrooms
- 2 tablespoons olive oil
- oregano & italian mix seasonings
- about 1/2 cup Pizza or Marinara sauce
- 4 oz Mozzarella cheese
- 3 oz Manchego cheese -a semi-firm sheep’s milk cheese (Gilboa can be used)adds amazing flavor-one of our secret ingredients)
- 2 oz any other semi hard cheese- I usually use either Jarlsberg, Pepper Jack,or Dubliner type.

If using Pizza mix-follow as directed plus add honey and caraway seeds. Knead for 2 minutes. If dough texture is too moist or sticky-add flour; if too stiff or hard to manage-add a little more honey or 1/2 teaspoon olive oil & continue kneading. Set aside to rise for 30 minutes. If you get ready made dough, add honey & seeds then re-knead. Cut dough in half for a better/thinner crust (our tested method!). Freeze the other half in wax paper for future date or double the toppings for 2 pies.

In a food processor use a medium blade to chop vegetables- if by hand-cut to about 1/2 inch tall by 1/4 inch thick. Saute veggies in olive oil till soft. Season with oregano & other Italian seasonings. Combine with the pizza sauce-set aside to cool. Grate cheese-in a food processor, grate fine to medium blade or grate by hand. Do not get pre shredded cheese-will be too salty & tasteless.

Roll out dough & place on a pizza tray or pizza stone, brush on a small amount of olive oil. Bake for 5 to 10 minutes. Flip, brush & bake for about 5 more till lightly baked. Add topping-first a thin layer of the cheese mixture, then the veggies/sauce, sprinkle with seasonings, top with the rest of the cheese. Bake for 10 to 15 minutes based on how well done you like it. ENJOY!

Some of our variations. Dough: instead of caraway seeds add diced sundried tomatoes or spice with red chili peppers. Toppings:add extra 1oz goat cheese.Or White Pizza- 1 1/2 cups cooked spinach,5 cloves roasted garlic,6oz ricotta & 4oz mozzarella cheese
