Cheesburger Soup
ingredients
- 3/4 cup diced onions
- 3/4 cup diced carrots
- 3/4 cup diced celery
- 1 tbl butter
- 1 lb ground beef
- 3 cups chicken broth
- 1/2 tsp black pepper
- 4 cups diced potatoes
- 1 tsp basil
- 1 tsp parsley
- 3 tbl butter
- 1/4 cup flour
- 1 tsp salt
- 1 1/2 cups milk
- 1/4 cup sour cream
- 2 cup American cheese

Saute onions, carrots and celery which have been diced into small pieces. Cook in 1 tbl of butter for about 10 minutes or until tender.

Brown 1 pound ground beef in stock pot; drain. Add chicken broth, hamburger and the 4 cups of diced potatoes to vegetables in stock pot.

Add basil and parsley. Bring to a boil until potatoes are tender.

Melt 3 tbl butter in separate pan. Add the 1/4 cup flour. Whisk until flour is absorbed. Whisk into soup.

Add salt, pepper and 1 1/2 cups milk. Add 2 cups shredded cheese. Stir until cheese melts. Add 1/4 cups sour cream. Serve
notes
I like to use shredded velveeta. You may need to add more chicken stock.
