Cucumber Mango Salsa
You can add 1 lb cooked and chopped shrimp to this recipe to make a yummy ceviche!
ingredients
- 3 mangos - peeled, seeded, and diced
- 1 cucumber - peeled, seeded, and diced
- 1/2-1 med red onion - finely diced
- 1 clove garlic - minced
- 1/4 cup chopped fresh cilantro
- 1 T lime juice, or to taste
- Salt and Pepper to taste

Stir together the mango, cucumber, onion, garlic, and cilantro in a mixing bowl.

For extra mango flavor squeeze mango seed over bowl to get extra juice.

Season with lime juice, salt, and pepper.

Refrigerate at least 2 hours before serving to allow flavors to blend.
