Gazpacho Soup
This is another of Marcelette Thompson’s recipes. (Bob’s mom). It can be doubled, tripled, depending on the the amount of vegetables you decide to use and that too, can vary according to your taste.
ingredients
- 3 cups tomato juice (V-8, Garden Cocktail, etc.)
- 1/4 t. tobasco
- 1/2 t. wocestershire
- 1 T. Lemon Juice
- 1/2 t. basil
- 1/4 t. pepper
- 2-3 T corn oil (or some oilve oil)
- 4 medium peeled, finely diced tomatoes
- 1 small green pepper
- 1 stalk celery, finely chopped
- 1 medium cucumber, finely diced
- 2 T. finely chopped onion
- 1 clove garlic, finely diced
- 2 T. chopped parsley

Combine all of the above.

Chill at least 4 hours.

Can be served with garlic croutons.
