Best Moroccan Fish

spicy! add less hot paprika if you don’t like it spicy but this fish is amazing!

ingredients

  • 1 onion- sliced
  • 5 cloves garlic- minced
  • 2 jalapeno peppers- sliced thinly lengthwise
  • 1 red bell pepper- sliced into long strips
  • 2 small or 1 big carrot- cut into matchsticks
  • 2-3 potatoes- slice into rings (thin)
  • 2-3 plum tomatoes- sliced into rings (thin)
  • 4 tilapia fillets
  • spices: paprika, hot paprika, salt, black pepper, garlic powder, turmeric

directions

    saute onion and garlic in olive oil in large deep skillet till tender, then add carrots saute till tender, then add peppers saute till tender. sprinkle each spice to evenly coat all veg in the skillet(except the turmeric- sprinkle less of it). mix veg and spices, cover and let cook a few min. cover surface with an even layer of sliced tomatoes- go all the way around the pan, then with a layer of sliced potatoes- do not mix- it should remain in layers. sprinkle spices on top of potatoes same as before. top with the tilapia then pour in enough water to reach right under the tomatoes. then fill plastic cup 1/2 with oil, again sprinkle a little of each spice in there and fill to the top with water, mix well and pour over fish. cover and cook for 15 minutes. chop 1/2 bundle of cilantro and sprinkle over the top of the fish, cover and cook for another 15 min. when serving use a big spatula to help make sure everything stays in layers
