Chicken Parmesan
ingredients
- Boneless, skinless chicken breasts or tenders
- 1 egg, beaten
- Italian or Parmesan flavored bread crumbs
- Mozzarella cheese slices
- 1-1 1/2 quarts heated marinara sauce
- Italian blend shredded cheese

Preheat oven to 350 degrees. Spray baking dish with cooking spray.

Dip chicken pieces first in egg, then in bread crumbs. Make sure it is well-coated on both sides. Place chicken in baking dish and bake, covered, for 20 minutes.

Remove chicken and top each serving with half a slice of mozzarella. Then cover with hot marinara and sprinkle with shredded cheese. Bake uncovered for another 10 minutes, or until cheese is melted.

(Size of dish is easily adjustable, depending on amount of chicken baked.)
