Jill's Cheesecake
ingredients
- BASE
- 1 packet digestive biscuits, crushed
- 1 teaspoon grated lemon rind
- 1 tablespoon lemon juice
- 75g butter, melted
- FILLING
- 2 teaspoons gelatine
- 2 tablespoons water
- 250g cream cheese
- 250g sour cream
- 1/2 cup sugar
- 2 tablespoons lemon juice
- 1 teaspoon lemon rind
- 1 teaspoon vanilla essence

Combine all ingredients for the base together and press into dish. Refrigerate to set.

Combine gelatine and water, leave to swell for 10 minutes.

Beat cream cheese until soft, then add sour cream and combine well. Add sugar, lemon juice, rind and vanilla. Beat until sugar has dissolved.

Dissolve gelantine over water. Add to cream cheese mixture. Spoon mixture over base.
