Thanksgiving Dressing

Sweet, spicy and savory. This stuffing has it all!
ingredients
Stuffing- 1 lb lean hot italian turkey sausage
- 2 cups onion, coarsely chopped
- 1 tsp crushed red pepper flakes
- 8 cups cornbread or bread stuffing mix (Pepperidge Farm)
- 1 cup chopped pecans
- 4 medium granny smith apples, cored and cut into bit sized chunks
- 2 cups chopped Italian Parsley
- 1/2 cup chopped fresh sage
- 4 egg whites, room temperature
- 3 cups Chicken Broth
- 1 Tbs baking soda
- Soaked fruit
- 1 cup chicken broth or bourbon
- 1 cup of dried fruit. Make a mixture of: golden raisins, dried cherries, apricots, cranberries

Bring the 1 cup of stock or bourbon to a boil. Remove from heat and add the dried fruit. Allow to soak overnight.

Preheat oven to 375 degrees (conventional)

In a medium saute pan, place the ground turkey, onion and pepper flakes. Brown over medium heat, drain off the fat.

In a VERY LARGE bowl, combine the cooked turkey, cornbread, pecans, fruit, parsley and sage. Toss well.

Add 3 cups of the stock and pepper to taste, also add any remaining liquid from the soaked fruit.

Beat egg whites until stiff. Gently fold the whites into the stuffing mixture. Sprinkle top with the baking soda and fold in. The stuffing will be very moist.

Spoon the stuffing into two 9x13x2 pans. Bake 45 minutes to 1 hour, until golden brown and crisp.

This make a LOT of dressing. 1 pan for serving and leftovers, the other to give to guests in goodie bags.
