ZUCCHINI PINEAPPLE NUT BREAD
I am being serious...NOT!
ingredients
- 3 Eggs
- 2 cups sugar
- 1 cup corn oil
- 3 cups flour
- 1 tsp. salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 cup crushed pineapple, drained
- 2 cups grated zucchini, drained*
- 1 cup chopped walnuts

*To drain zucchini, you can just ball it in your hand and squeeze the juice out.

Beat first 3 ingredients until fluffy. Sift flour, salt, baking powder and soda. Add to mixture and then add crushed pineapple, zucchini and nuts.

Bake in 2 8x4-inch bread pans @ 350° for approximately 50 minutes or until a toothpick comes out clean.
