Round steak with vegetables
Meat and potatoes meal
ingredients
- 1 lb beef round steak 1/2 in thick
- 2 tbls evoo
- 6 large carrots, cut into 2 inch pieces
- 6 whole tiny potatoes, halved
- 1 large onion- peeled and cut into wedges
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/4 tsp salt
- 1/8 tsp black pepper
- 3/4 cup beef broth
- 2 tbls flour
- 1/4 cup water

Trim any visible fat from the meat, set aside

In pressure cooker heat 1 tbls of the oil over med heat. Cook meat until brown on all sides. Add more oil if needed. Remove the meat and set aside. Drain off fat.

Add carrots, potatoes, onion, rosemary,thyme, salt and blk pepper and beef broth. Place meat on top of vegetables.

Lock lid in place. Cook for 8 min on high.

Quick release the pressure. With slotted spoon, remove the meat and vegetable to plate.

In small mixing bowl stir flour and water. Stir into broth. "Cook until thickened and bubbly. Serve over meat.
