TERRE'S SALMON CAKES
If I say ’pretty please’, can I have your pumpkin pie?
ingredients
- 1 15-oz. can salmon, drained completely
- 2 cups fresh bread crumbs
- 2 Tbsp. lowfat/skim milk
- 2 Tbsp. lemon juice
- 1 small onion, chopped
- 1 tsp. Dijon mustard
- pinch cayenne pepper
- 2 large eggs or 3 egg whites, beaten lightly
- 1/3 cup Italian bread crumbs
- Olive or safflower oil

*I break up 2 slices fresh whole wheat bread.

Mix 1st 8 ingredients well - until bread “disappears”. Shape into round 2 1/2-inch cakes. Coat with Italian breadcrumbs.

Heat oil over medium heat. Cook 5 minutes or until golden brown.
I have also done these on the grill without the Italian breadcrumbs, If you do this, use you oil on a paper towel to oil your grill. Safflower oil is high in vitamin E and has a good flavor.

You can cook these ahead and then re-heat later.
