POACHED PRAWNS- 1 small onion, sliced
- Half of a lemon, sliced
- 2 bay leaves
- 1 celery stalk, sliced
- 1 tablespoon (15 mL) whole coriander seeds
- 1 teaspoon (5 mL) whole black peppercorns
- 2 teaspoons (10 mL) sea salt
- 1 pound (500 g) large raw prawns, peeled and deveined
- 1/2 cup (125 mL) mayonnaise
- 1 tablespoon (15 mL) prepared horseradish
- 1/4 cup (60 mL) ketchup
- 1/4 cup (60 mL) whipping cream
- 1 tablespoon (15 mL) bourbon
- 1/8 teaspoon Tabasco sauce

Tie the onion, lemon, bay leaves, celery, coriander seeds and peppercorns in a piece of cheesecloth.

In a pot, bring 4 cups (1 L) of water to boil. Add the cheesecloth bundle. When the water returns to a boil add the prawns and stir to separate them. Cover with a lid and remove from the heat. Let rest off the heat for 10 minutes. Drain. Refrigerate until cool. Serve within 2 days of cooking and keep refrigerated.
