Dad's Famous Roll-ups
Que Bueno - great roll-ups in the style of fajitas
ingredients
- 2 chicken breasts, grilled, then sliced
- juice of a lime
- 2 cloves of garlic
- a sprinkle of hot chili powder or hot paprika
- 1/2 teaspoon of cumin
- 10 tortillas, wrapped in foil and heated in the oven
- 1 green pepper, cored and thinly sliced
- 1 red onion, sliced into thin rounds
- 1/2 cup of grated monterey jack cheese (or use the pre-grated Mexican-style packaged kind from the store).
- 1/2 jar of store-bought hot salsa
- sprigs of cilantro
- cup of rice (optional)
- black beans (optional)
- guacamole (optional)

Marinate the chicken breasts for approximately 1 hour in the lime, garlic, and sprinkle of chili powder.

Meanwhile, slice the red onion and green pepper. Prepare any other fillings, as desired.

Chop some cilantro and use a 1/2 teaspoon to liven up the store-bought salsa.

Grill the chicken, approximately 7 minutes per side on the barbecue. If cooking indoors, slice the marinated chicken to stir-fry or pan-fry it.

Pan fry or stir-fry in a wok one at a time, the peppers and the onions. Add a little cumin to each, as desired. Once the vegetables are wilted, remove from pan and place on a serving dish in separate lines or in separate bowls. Either stir fry the sliced chicken or slice the grilled chicken and add it to the platter or its own separate bowl. Sprinkle with cilantro.
