chocolate caramel bites
ingredients
- 1 box chocolate covered cookies (square)
- 9 caramel squares
- 1 1/2 teas. heavy cream
- 1 box double chocolate mousse mix
- 1 bottle chocolate-fudge quick set topping
directions

place cookies chocolate side up in jelly roll pan. in microwave melt caramels and cream for 30 seconds or until caramels are melted. let sit 1 minute, stir until smooth. let cool 2 minutes. using greased spoon, divide caramel mixture evenly among cookies. freeze for 5 minutes.

prepare mousse mixture according to package directions. reducing milk to 1/4 cup. spoon into pastry bag fitted with large plain tip. pipe into two 2 inch rows of mousse side by side onto cookies.

freeze for 2 hours. place cookies on rack in jello roll pan. coat with chocolate fudge topping. chill until ready to serve.

place a slivered almond or something else on top of each bar as soon as chocolate topping is put on.
