Yum-Yum Cupcakes
ingredients
- Filling:
- 8 oz. cream cheese
- 1/3 cup sugar
- 1 egg
- Dash salt
- 12 oz. package of chocolate chips
- Batter:
- 2 cups sugar
- 1/2 cup cocoa
- 2 teaspoons baking soda
- 2/3 cup oil
- 3 cups flour
- 2 teaspoons vanilla
- 2 Tablespoons apple cider vinegar
- 2 cups water

Cream together cream cheese, sugar, egg and salt. Add chocolate chips; set aside.

Beat batter ingredients. Note batter is thin.

Fill cupcake papers 1/2 full of batter.

Spoon rounded teaspoon of filling into the center of each cup.

Bake at 375 degrees for 20-25 minutes.

Optional: Frost with vanilla or chocolate frosting. My family likes plain.
