Pistachio Crusted Pork with Plum Sauce

- Pork Tenderloin
- Flour
- 2 TBS. Peanut oil
- Pistachios
- Plum sauce
- 4 garlic cloves, minced fine
- 1/2 ounce fresh ginger, minced
- 1 small onion, minced
- 1 cup brown sugar
- 2 cups water
- 1/8 cup teriyaki sauce
- 1 teaspoon sesame oil
- 1/8 cup soy sauce
- 1/2 teaspoon crushed dried chili
- 3 lbs plums, pitted & chopped
- 1 lemon, juice of, fresh
- 1 tablespoon cornstarch
- 1 tablespoon water
directions
Put pistachios in a blender and make a fine powder. Slice pork tenderloin in 1/2 in thick slices. Dredge the pork in flour. Heat peanut oil on medium heat. Preheat the oven to 350. Brown pork lightly (about 45 sec – 1 min on each side). Roll pork pieces in pistachio powder (try to cover the piece as much as possible). Bake pork in the oven until done (about 30 min. Put a spoonful of plum sauce in the center of the plate. Arrange 3-4 pieces of pork around the sauce.

It’s really easier just to buy some jar plum sauce and add soy sauce, garlic, and salt and pepper
