Ribs
The glaze makes enough for at least 6 racks, so you may want to halve the recipe
ingredients
Dry Rub- 1 1/2 cups Old Bay Seasoning
- 3/4 cups brown sugar
- 2 tablespoons dry basil leaves
- 2 tablespoons dry oregano leaves
- 1 teaspoon dry marjoram leaves
- 2 teaspoons dark chili powder
- 1 tablespoon dry thyme leaves
- 1 tablespoon ground coriander
- 1 tablespoon sweet paprika
- 1 teaspoon cumin
- 1 teaspoon cayenne pepper (or to taste)
- 1 teaspoon ground black pepper
- Vegetable Oil
- Apple Juice
- 1 tablespoon vegetable oil
- 1 cup diced onion
- 5 garlic cloves
- 2 cups ketchup
- 1 cup chicken broth
- 8 oz diced mango
- 1/2 cup hoisin sauce
- 1/2 cup cider vinegar
- 2 oz bourbon
- 2 ancho chiles, seeded and chopped
- 2 tablespoons brown sugar
- 2 tablespoons lemon juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon lemon zest
- 1/2 teaspoon Old Bay
- 1/2 teaspoon freshly ground pepper
- pinch cayenne pepper

For the Ribs:

Remove silver skin from ribs.

Dry blend all ingredients together. Liberally rub entire surface of meat with dry rub-don’t be shy. Tightly wrap in saran wrap and allow to cure overnight in the fridge. The next day, take the ribs out and allow to warm up 30 minutes to 1 hour. When ready, preheat oven to 250° or 275°, depending on how much time you have. Add tray of hot water to lowest shelf in oven. Place the ribs directly on rack above water-rib side down. Do not turn over at all.

After at least 1 1/2hrs, splash top of ribs with 1unit oil and 3 units apple juice mixture, and then every 20-30 minutes after until done. Ribs will take 3 to 4 hours, depending on over temp. Ribs are done when toothpick slides easily into meat between ribs at the thickest point.

**Optionally, you can finish the ribs on the grill for about 10 to 20 minutes and add a glaze as well.
For The Glaze:
Heat oil over medium-high heat. Add onion and garlic and saute for about 5 minutes or until the onions are tender and have a sweet aroma. Add the rest of ingredients and simmer for 30 minutes. Puree the barbecue sauce in blender until smooth.
