French Onion Salisbury Steak
A fancy burger that is worth the extra time.
ingredients
- 1 1/4 lbs ground beef, pref 80/20
- 2 Tb. minced scallions
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 2 Tb. flour
- 1 Tb. olive oil
- 2 cups onions, sliced - about two med.
- 1 tsp. sugar
- 3 cloves minced garlic
- 2 Tb. tomato paste
- 2 cups beef broth
- 1/4 cup red wine
- 3/4 tsp. kosher salt
- 1/2 tsp. dried thyme
- 4 slices cheese toast (homemade or purchased)

Combine beef, scallions, salt and pepper. Divide evenly into 4 portions and shape into 1" thick oval patties. Spread 2 Tb. flour in a shallow dish and coat each patty in flour. Save 1 tsp. flour.

Heat 1 Tb. oil in a saute pan over med-high heat. Add patties and saute 3 min on each side or until browned. Remove from pan.

Add onions and sugar to pan; saute for 5 min. Stir in garlic and tomato paste and saute 1-2 min or until tomatoe paste begins to darken. Sprinkle the onion mixture with reserved flour; cook one min. Stir in broth, wine and add salt and thyme.

Return meat and any drippings to pan and bring soup to a boil. Reduce heat to med-low, cover, and simmer 10 min.

Serve steaks on cheese toasts and ladle onion soup over. Garnish with parmesan if desired.
