Passover Apple Cobbler

ingredients

  • 3 large eggs
  • 3/4 C. sugar
  • 1/4 C. vegetable oil
  • 3/4 C. matzo meal
  • 2 T. potato starch
  • 1/4 t. salt
  • 3 Granny Smith apples
  • 3 Cortland apples
  • 1/2 C. cinnamon sugar

    Preheat oven to 350°. Lightly grease a 9“ X 9” pan. Beat eggs with sugar until well blended. Add oil, matzo meal, potato starch, salt and blend well.

    Place apples in pan and sprinkle with most of the cinnamon sugar, reserving some for the top.

    Spoon batter over fruit, covering as much of the apples as possible. Sprinkle with remaining cinnamon sugar.

    Bake until topping is set and just turning tan, about 45 minutes. Serve hot, warm or at room temperature.
