Farmer's Market Salad - Green Beans, cherry tomato and red potato salad
On a hot summer day, Jim and I biked over to Prospect Park to go to the farmer’s market. I intended not to get anything but the green beans and the yellow-orange-ish cherry tomatoes looked too good. Here’s the salad made up on the fly.
ingredients
- a bunch of green beans
- a carton of cherry tomatoes
- 4 -5 small red potatoes
- olive oil
- lemon juice
- salt and pepper
- soy sauce

Boil water in a medium size pan for the potatoes. Add 2 tablespoons of salt to add flavor to the potatoes. Once the water comes to boil, add the potatoes until the potatoes are soft, 8 minutes or so.

At the same time, in a smaller pan, boil water for the green beans. When the water comes to a boil, add the green beans for 2-3 minutes - until the green beans turn a brighter green. Use a collander and hold under cold water under the sink until green beans are cooler.

In a small bowl, whisk together olive oil, soy sauce, salt, pepper and lemon juice.

Add, green beans, potatoes and tomatoes together while the potatoes are hot. Pour the olive oil mixture on top of the vegetables and mix together well.
