ingredients

  • 3 cups chicken stock
  • 2 tablespoons fish sauce
  • 1 leek, cut into thin rounds
  • 1 chicken breast, skinned and sliced as thin as possible
  • 1 teaspoon chilli powder
  • 1 handful clear vermicelli noodles
  • 2 tablespoons chopped mint and/or coriander
  • salt and ground pepper to taste
  • juice or 1 lemon or lime

directions

    Bring chicken stock to a simmer in a large pot.

  • 2

    Add fish sauce and leeks and simmer for 5 minutes.

  • 3

    Mix in all other ingredients except the herbs, and simmer 3 minutes until chicken is cooked.

  • 4

    Add herbs, season and serve at once.

notes

Other vegetables can be added : carrots, beans, broccoli etc.
