Vietnamese Pho Bo
ingredients
- 3 cups chicken stock
- 2 tablespoons fish sauce
- 1 leek, cut into thin rounds
- 1 chicken breast, skinned and sliced as thin as possible
- 1 teaspoon chilli powder
- 1 handful clear vermicelli noodles
- 2 tablespoons chopped mint and/or coriander
- salt and ground pepper to taste
- juice or 1 lemon or lime

Bring chicken stock to a simmer in a large pot.

Add fish sauce and leeks and simmer for 5 minutes.

Mix in all other ingredients except the herbs, and simmer 3 minutes until chicken is cooked.

Add herbs, season and serve at once.
notes
Other vegetables can be added : carrots, beans, broccoli etc.
