TSLIL'S ROASTED RED POTATOES
Tslil is a potato expert, I asked her for her favorite....this is it!
ingredients
- 2 lbs purple potatoes
- 1/4 cup olive oil
- 1 medium shallot, finely chopped
- 1 garlic clove, finely chopped
- 1/4 cup chopped fresh (flat-leaf) parsley
- 2 tablespoons chopped fresh thyme
- kosher salt and black pepper
directions
Preheat oven to 400 F. Toss the potatoes with the other ingredients in a large bowl. Transfer them to a shallow roasting pan. Roast for 40-50 minutes, depending upon size of potatoes, until tender. Allow the potatoes to cool slightly before cutting them into halves or quarters.
