Delicious Pumpkin Bread

ingredients

  • 3 cups sifted flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp nutmeg
  • 1 Tbsp cinnamon
  • 5 eggs
  • 2 cups pumpkin
  • 2 cups sugar
  • 2 cups oil
  • 2 small pkgs instant coconut cream pudding

directions

Blend all wet ingredients together. Add dry ingredients into wet slowly. Add instant pudding and mix well. Pour into 3 regular size loaf pans and bake at 350 for 1 hour.

This recipe is from my dear friend, Julia Wetmore(via her sister Deirdre Belden), who lost her battle with cancer in 2009 at the young age of 41. She was an amazing person and I always think of her when I make this bread every fall.
