Vegan Pumpkin & Sweet Potato Soup

Perfect for fall and winter

  • 1 Tbsp. margarine

  • 1 diced onion or 1 Tbsp. onion powder

  • 1 c. white wine

  • 2 c. fresh pumpkin puree

  • 3 chopped sweet potatoes

  • 4-7 c. vegetable broth

  • In large soup pot, heat onion in margarine for about 2 minutes. Reduce heat to low and add wine. Simmer for 5 minutes. Add remaining ingredients and bring to simmer. Cook for 30 minutes or until pumpkin and sweet potatoes are soft. Puree in food processor or blender, or mash to desired consistency.

PREP TIME: 1:30 hours

TOTAL TIME: 2:30 hours

Jessica came up with this recipe when she was besotted with cooking from fresh pumpkins and other gourds. Turned out exceptionally well.
