Vegan Pumpkin & Sweet Potato Soup
Perfect for fall and winter
1 Tbsp. margarine
1 diced onion or 1 Tbsp. onion powder
1 c. white wine
2 c. fresh pumpkin puree
3 chopped sweet potatoes
4-7 c. vegetable broth
In large soup pot, heat onion in margarine for about 2 minutes. Reduce heat to low and add wine. Simmer for 5 minutes. Add remaining ingredients and bring to simmer. Cook for 30 minutes or until pumpkin and sweet potatoes are soft. Puree in food processor or blender, or mash to desired consistency.
