Great and hearty chili

ingredients

  • 2 Tbsp. extra virgin olive oil
  • 1 lb. lean ground beef
  • 1/2 sweet onion, finely chopped
  • 1 clove garlic
  • 1 Tbsp. chili powder
  • 1 tsp. ground cumin
  • 1 can (15 oz.) black beans
  • 1 can (15 oz.) pinto beans
  • 1 can (10 oz.) tomatoes with green chiles
  • salt and pepper
  • 12 oz. pepper jack cheese
  • 1 pkg. corn tortilla chips

directions

    Heat oil in large pot. Add beef and cook until browned. Add onion, garlic, chili powder, and cumin, and cook over medium heat about 5 minutes.

    Add cans of beans and tomatoes, with liquid, to pot. Simmer and cook for 15 minutes or until thickened. Season with salt and pepper. Place tortilla chips in bowls, top with chili and cheese.

I found this recipe somewhere and decided it makes a great chili. Wonderful for those wintry nights.
