SHRIMP FAJITAS
Quick and Easy and as good as any Mexican Restaurant serves!
ingredients
- 1 1/2 tbsp. vegetable or olive oil
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 cup sliced onion
- 1 lb. medium shrimp- peeled and deveined
- 1 (1.25 ounce) package Taco Seasoning Mix
- 3 tbsp. water (or more if needed)
- 6 (10 inch) flour tortillas, warmed

Heat 1 tbsp. oil in large skilled (or if you have electric Wok)

Add the peppers and onion. Cook stirring frequently until hot and peppers are still crisp. (About 5 minutes) Remove and set aside.

Pour the remaining oil into skillet and add shrimp. Cook, stirring constantly until pink and opaque. Only takes a few minutes.

Reduce heat to low and return the peppers and onions to pan. Stir in taco seasoning and water so that everything is coated. Simmer until peppers are heated.

Serve in warm tortillas.(Microwave 10 seconds)

Can be served alone (plenty to eat), or with Spanish Rice and Refried Beans.

Should be good with chicken, beef or pork (using raw meat cubes in place of the shrimp).
