French Onion Soup
A delicious homemade version of this classic
ingredients
- 1/4 c. plus 2 Tbsp. butter, melted
- 2 Tbsp. olive oil
- 3 large onions, thinly sliced
- 1/2 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. dry mustard
- 5 cans beef broth
- 2c. dry white wine
- 3 Tbsp. all-purpose flour
- 3 Tbsp. water
- 9 slices of toasted French bread
- 3 c. (12 oz.) shredded Gruyere cheese

Prepare and cook soup

Combine butter and oil in a large pot. Separate onions into rings and add to pot. Cook over medium-low heat 30 minutes, stirring often. Stir in sugar, salt, and mustard. Cook 30 minutes, stirring occasionally. Add broth and wine.

Combine flour and water, whisk, and add to onion mixture. Reduce heat and simmer 30 minutes.
Prepare cheesy croutons

Preheat oven to 450 degrees.

Place toast slices on baking sheet. Sprinkle with cheese. Bake until cheese melts. Cut into croutons. Sprinkle over soup portions just before serving.
