Walnut-Streusel-Topped Sweet Potato Casserole
A necessary accompaniment to the Thanksgiving and Christmas spreads.
ingredients
Yam mixture ingredients- 1 large can yams (if using a small can, then cut all other ingredients!)
- 2 eggs
- 1/2 stick melted butter
- 1/2 c. milk
- 1/4 c. orange juice
- 1 tsp. cinnamon
- 1/2 stick softened butter
- 1/4 c. all-purpose flour
- 2/3 c. firmly packed light brown sugar
- 1 c. chopped walnuts
- 1 Tbsp. brandy

Prepare the yam mixture
Blend yams in a blender. Add eggs, 1/2 stick melted butter, milk, orange juice, and cinnamon. Blend. Pour into buttered 6-quart baking dish.
Prepare the topping

In a bowl, combine softened butter, flour, brown sugar, and walnuts. Add brandy to taste. Mix well with fingertips and sprinkle evenly over top of potato mixture.

Bake at 350 degrees until topping is bubbly, about 1 hour.

I got this from a neighbor, Marion Nelson, at a progressive dinner party. I tried to emulate it by taste at Maggie's when we went there for Christmas, but then got the recipe from Marion. I've since changed it to add the orange juice and cinnamon.
