Veggie Sammy
This is a tasty, fast sandwich that can be a “use up” for any leftover veggies.
ingredients
- Wheat Italian 5 grain bread (I like Publix brand)
- Homemade Pesto (see recipe in “everything else” section
- Roasted, grilled, or steamed vegetables such as asparagus, zucchini, or squash
- fresh mozzarella or provolone cheese (any cheese will do here)

Toast 2 slices of bread

spread both pieces with the pesto
- 3
add cheese to one side and veggies to the other
- 4
toast open-faced in oven again until cheese is hot and bubbly and veggies are heated through

now assemble, cut in half and enjoy!!
