This is a tasty, fast sandwich that can be a “use up” for any leftover veggies.

ingredients

  • Wheat Italian 5 grain bread (I like Publix brand)
  • Homemade Pesto (see recipe in “everything else” section
  • Roasted, grilled, or steamed vegetables such as asparagus, zucchini, or squash
  • fresh mozzarella or provolone cheese (any cheese will do here)

directions

  • 1

    Toast 2 slices of bread

  • 2

    spread both pieces with the pesto

  • 3

    add cheese to one side and veggies to the other

  • 4

    toast open-faced in oven again until cheese is hot and bubbly and veggies are heated through

  • 5

    now assemble, cut in half and enjoy!!
