Potatoe Gnocchi
ingredients
- 2 lbs. potatoes, boiled and mashed
- 1 lb flour (4 cups)
- 1 egg
- Pinch of salt
- Ricotta Gnocchi
- 1 lb ricotta cheese
- 1 lb flour
- 1 egg
- pinch of salt
- water(if dough is too firm)
directions
Sift flour and salt. Make a well. Add potatoes or ricotta which has been minced with the egg; work until you form a ball. Let rest for 10 minutes. Cut off a piece at a time and roll into a thick cord-like rope. Cut rope into smaller pieces about 3/4 to 1 inch long. Cook to taste in boiling water usually about 5 minutes.
