Chunky Greek Salad
ingredients
- 2 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- 3/4 tsp salt
- 1/2 tsp pepper
- 1 pint grape tomatoes, cut in half
- 6 Kirby cucumbers (1 1/2 lbs) unpeeled and cut into 1"x1/2 inch chunks
- 1 large red pepper cut into 1" pieces
- 1 green onion thinly sliced
- 1/2 cup Kalamata olives, pitted and coarsely chopped
- 1/4 cup loosely packed fresh mint leaves, chopped
- 3/4 cup (3-oz) crumbled feta cheese
directions
Mix all ingredients well.
