Grilled Fish Tacos with Chipotle-Lime dressing
ingredients
- Marinade:
- 1/4 C extra virgin olive oil
- 2 T white vinegar
- 2 T fresh lime juice
- 2 T lime zest
- 1 1/2 tsp honey
- 2 garlic cloves, minced
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp ground black pepper
- 1 tsp hot pepper sauce, to taste
- 1 lb. tilapia fillets, cut into chunks
- Dressing:
- 1 8 oz. container light sour cream
- 2 T fresh lime juice
- 1/4 tsp cumin
- 1/4 tsp chili powder
- salt and pepper to taste
- Toppings:
- tortillas, tomatoes (diced), cilantro, lettuce, limes (cut into wedges), avocado

Whisk together olive oil, vinegar, lime juice, lime zest, honey, garlic, chili powder, black pepper and hot sauce until blended. Place tilapia in a shallow dish and marinate in refrigerator 6-8 hours.

Combine ingredients and refrigerate until needed.

Preheat outdoor grill and remove fish from marinade. Grill until easily flaked with a fork, about 9 minutes, turning once.

Assemble tacos with desired amounts of toppings. Garnish with lime wedges.
