GARDEN VEGETABLE CASSEROLE
ingredients
- 1 c. almonds, slivered
- 1/4 lb. Bacon, cut into 1" strips
- 1 lb. zucchini squash, sliced
- 1 lb. Eggplant, diced (sprinkle
- With fruit fresh)
- 1 lg onion, chopped
- 1 tbsp flour
- 1-16 oz. Can diced tomatoes, undrained
- 1 tsp minced garlic
- 1 tsp dried basil
- Pepper to taste (minimal salt needed, the
- bacon, tomatoes, & cheese have salt)
- 1-6 oz pkg, sliced Swiss cheese

Saute almonds with bacon in large skillet. Remove with slotted spoon. Add zucchini, eggplant, and onion. Cover & cook over medium heat for 15 min, stirring frequently. Add flour and mix. Add tomatoes, stir in garlic, pepper & basil. Layer vegetable mixture, almond and bacon mixture and cheese slices in 13x9 baking dish, ending with bacon and almonds in a ring on top. Bake
