Pies - Coconut Cream Pie

ingredients

  • 1 9-inch pie shell, baked and cooled
  • 1/2 cup sugar
  • 3 tbsp flour
  • 3 tbsp cornstarch
  • 1/2 teas salt
  • 1 1/2 cups coconut milk
  • 1/2 cup milk
  • 1 egg, beaten
  • 1 teas vanilla
  • 1 cup whipped cream or Cool Whip
  • 1 cup sweetened flaked coconut
  • 1/2 cup coconut, toasted, for garnish

    Mix sugar, flour, cornstarch and salt in a medium saucepan. Gradually add milks and whisk until completely combined. Cook over medium heat until mixture comes to a full boil. Whisk about 1/2 cup into beaten egg to temper, then return to saucepan and return to a boil over medium heat. Cook, stirring constantly until mixture is thick and smooth. Remove from heat and stir in vanilla. Transfer this mixture to a bowl, cover the surface with plastic wrap and chill completely.

    Remover cream from refrigerator and whisk until light. Fold in whipped cream and flaked coconut and pour into pie shell. Frost with additional whipped cream, if desired and sprinkle top with toasted coconut. Serve cold.
