Bars - Lemon Cheesecake Squares

ingredients

  • 3/4 cup butter
  • 1/3 cup brown sugar
  • 1 1/4 cups oats
  • 1/4 teas salt
  • 1/2 cup raspberry jam, seedless
  • 16 oz cream cheese, softened
  • 3/4 cup sugar
  • 2 tbsp flour
  • 2 eggs
  • 3 tbsp lemon juice
  • 2 teas lemon zest

    Preheat oven to 350°F.

    Grease a 9x13-inch baking pan and set aside. Beat butter with sugar until fluffy. Add oats and salt and press into the bottom of the prepared pan. Bake for 20 minutes, or until light golden brown. Spread jam over hot crust.

    Combine cheese, sugar and flour until smooth. Add eggs, one at a time, beating well after each addition. Add lemon juice and zest and pour over crust. Bake for another 25 minutes, or until filling is set. Cool, chill, dust with powdered sugar and cut into squares to serve.
