Cheesy Corn Bites

- 1 cup shredded pepper jack chese
- 1 large egg
- 1/2 cup frozen corn kernels
- 48 scoop shaped tostitas (one 10z bag)
- Chopped chives or cliantro for sprinkling

Preheat oven to 350 degrees

In large bowl mix cream cheese, pepper jack cheese, egg and corn.

Arranged the chips on a large rimmed baking dish and place 1 tsp corn mixture in each. Bake until filling sets, about 20 minutes.

Sprinkle the corn bites with chives; serve warm
notes
Alternatives: defrost corn, toss with lime juice, salt and cilantro. Fill chips with sour cream and top with corn mixture. Also, add sliced jalepeno in bottom of each chip. Add Salsa, black beans, or olive tapenade to filling.
