Cucumber Yogurt (Tzatziki) Sauce

Greek Mediterranean white sauce is delicious on pita sandwiches, gyros, fish, and vegetables.

ingredients

  • 1 medium cucumber
  • 8 oz plain yogurt (not low-fat)
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • 2 tablespoons dill
  • 2 peel garlic cloves minced
  • juice of 1/2 lemon

directions

place 1 medium cucumber peeled and seeded into chopper. finely chop. spoon out onto paper towels to soak up moisture as much as possible. place cucumber in small bowl. add garlic, lemon, salt, pepper, dill, and sugar. pour off any liquid from yogurt and combine. do not over mix. cover bowl and immediately place in fridge to set for 24 hrs to thicken. keep chilled when not in use.
