Mediterranean Pita Pizza
easy pizza-style lunch
ingredients
- 1/4 cup sliced mushrooms
- 4 medium sliced black olives
- 1/4 cup sliced onion
- 1/4 cup low-sugar tomato sauce
- 1/2 whole grain pita pocket
- 1 tsp Parmesan cheese
- 2 oz lowfat sliced cheese
- 1 oz broiled or grilled chicken
- 1/4 tsp black pepper
- 1/4 tsp dried parsley
- 1/4 dried oregano
- 1/4 tsp garlic powder
- 1/4 tsp dried basil
directions
Mix together 1/4 cup low-sugar tomato sauce with 1/4 tsp black pepper, 1/4 tsp dried parsley, 1/4 dried oregano, 1/4 tsp garlic powder, and 1/4 tsp dried basil. Layer 1/4 cup sliced mushrooms; 4 medium sliced black olives; 1/4 cup sliced onion; and 1 oz broiled or grilled chicken on a 1/2 whole grain pita pocket. Sprinkle with 1 tsp Parmesan cheese and 2 oz lowfat sliced cheese. Heat in microwave or oven till cheese melts.

Serve this for lunch, preceded by Breakfast: Apple Cinnamon Oatmeal; Mid-morning: Strawberry Nut Yogurt and followed by Mid-day: Banana Shake; and Dinner: Spicy Grilled Cheese Sandwich.
