Mediterranean Salad
Delicious salad with olives and chickpeas in a light, creamy dressing
ingredients
- Dressing:
- 2 Tbsp yogurt
- 1 Tbsp lemon juice
- 2 tsp red wine vinegar
- 1 tsp garlic, minced
- 1/4 tsp crushed, dried oregano
- 1/4 tsp onion powder
- Salad:
- 6 deli-thin slices (2 oz) turkey breast
- 1/4 cup cucumber
- 1 1/2 cups lettuce
- 8 medium black or kalamata olives
- 1/4 cup garbanzo beans
- 1 1/4 medium tomatoes

Make dressing by mixing 2 Tbsp yogurt; 1 Tbsp lemon juice; 2 tsp red; wine vinegar; 1 tsp garlic, minced; 1/4 tsp crushed, dried oregano; and 1/4 tsp onion powder.

Chop 6 deli-thin slices (2 oz) turkey breast and 1/4 cup cucumber; 1 1/2 cups lettuce; 8 medium black or kalamata olives; and 1/4 cup garbanzo beansinto small pieces. Toss together with dressing. Serve immediately
