Crock Pot Stew
ingredients
- 3 pounds cubed beef stew meat
- 3 tablespoon olive oil
- 1 tablespoon dried parsley
- 1 package dry onion soup mix
- 1/4 cup red wine
- 1/4 cup flour
- 1 cup baby carrots
- 1 teaspoon pepper
- 3 tablespoons butter
- 1/4 cup warm water
- 1/2 teaspoon salt
- 4 large potatoes, cubed
- 2 cups boiling water
- 3 onions, sliced
- 2 tablespoons flour

Put in a ziploc bag - meat, 1/4 cup flour, and salt - shake to coat.

Heat oil in large skillet over medium heat. Add meat and cook until evenly brown. Transfer to crock pot along with carrots, potatoes, parsley, and pepper.

In small bowl, stir 2 cups boiling water and soup mix. Pour into crock.

In the skillet, melt butter and saute onions until softened. Put into crock. Pour red wine into skillet and stir to loosen browned bits of food. Pour into crock.

Cover and cook on high for 30 minutes. Reduce heat to low and cook for 6 hours.

In small bowl, mix together 2 tablespoons flour with 1/4 cup warm water. Stir into stew and cook uncovered for 15 minutes or until thick.
