Scrambled eggs with pasta, parm and mozzarella cheese. Great use of left over pasta - great for breakfast or dinner!
ingredients
- 4 large eggs
- 1 Tbs. unsalted butter
- 3 oz. cooked breakfast sausage links, cut into 1/3 inch thick pieces
- 1 cup cooked penne or rigatoni, at room temp, cut inot bite-size pieces
- 1/3 cup grated parm
- 1/2 cup shredded mozzarella cheese

Place the eggs in a medium-size bowl and whisk to blend.

Melt the butter in a large, nonstick skillet over medium heat. Add the eggs and sausage, if using, and cook for 30 seconds. Add the pasta and cook, stirring constantly, until the eggs begin to set, 1 minute.

Add the Parm and stir to blend. Sprinkle the mozzarella over the egg mixture, reduce the heat to low, and cover the skillet. Cook until the cheese melts, about 30 seconds, then turn off the heat. Let the skillet sit, covered, for 30 seconds to 1 minut, then serve the eggs immediately.
