Salmon Casserole
Recipe from the Inn of Sound
ingredients
- 8 eggs
- 1/2 cup milk
- 1/2 cup flour
- 3/4 tblsp of baking powder
- 1/2 tsp of salt and pepper
- 8 ounces sour cream
- 1 can salmon fillet (get rid of the skin and the bones if any)
- 1 cup shredded jack cheese
- 1 small can corn (drained)
- 1 cup black beans
- 1/2 tsp garlic
- 1 cup sauteed chopped leeks or onions
- 1 and 1/4 cups of medium salsa

Preheat oven to 350F

In large bowl combine and beat with an electric mixer eggs, milk, flour, baking powder, salt and pepper and sour cream.

Then add salmon, shredded jack cheese, corn (drained), black beans, garlic, leeks or onions and salsa.

Mix well then pour into medium sized ramekins or pan.(lightly greased with evoo)

Bake for 45 minutes
