JULIE'S PMS MUFFINS
THIS IS A NICE BREAKFAST MUFFIN
ingredients
- 1 1/4 cups oatmeal
- 1/2 cup rice flour
- 1/4 cup ground flaxseed (Julie uses 1/8 cup)
- 1 tsp. baking powder
- 1 tsp. baking soda
- 2 eggs, beaten
- 1/4 cup plain yogurt
- 3 medium, ripe bananas, mashed
- 1/2 cup agave syrup
- 1/3 cup grapeseed oil
- 1/4 cup walnut pieces
directions
Preheat oven to 375˚. In large bowl, whisk oatmeal, flour, flaxseed, baking powder and soda. In separate bowl, combine eggs, yogurt, bananas, syrup and oil. Add flour mixture and then fold in walnuts. Pour into paper-lined muffin tins. Bake 18-20 minutes for until top springs back when lightly touched
