Passover Spinach and Matzoh Souffle

  • 2 lbs Fresh Spinach (you can make is easier and use frozen spinach if you wish)
  • 4 Matzohs
  • Vegetable Oil
  • 7 large Eggs
  • 1 1/2 tsp Salt
  • 1/2 tsp black pepper (go easy on this)
  • 1 or 2 tbsp grated Onion

    Wash spinach thoroughly and discard the stems. Chop leaves finely.

    Soak matzohs in warm water for 10 minutes. Cover until all soft.

  • 3

    Remove the matzoh in small handfuls and squeeze out the water.

    Combine: eggs, salt pepper, with the matzoh and then stir in the spinach.

    Oil a 9“ X 13” baking pan (1/8" oil).

  • 6

    Turn mixture into pan and put some oil on top.

  • 7

    Bake in a 350 degree oven for 1 hour until high, puffy and thoroughly set.
