Passover Spinach and Matzoh Souffle
ingredients
- 2 lbs Fresh Spinach (you can make is easier and use frozen spinach if you wish)
- 4 Matzohs
- Vegetable Oil
- 7 large Eggs
- 1 1/2 tsp Salt
- 1/2 tsp black pepper (go easy on this)
- 1 or 2 tbsp grated Onion

Wash spinach thoroughly and discard the stems. Chop leaves finely.

Soak matzohs in warm water for 10 minutes. Cover until all soft.

Remove the matzoh in small handfuls and squeeze out the water.

Combine: eggs, salt pepper, with the matzoh and then stir in the spinach.

Oil a 9“ X 13” baking pan (1/8" oil).

Turn mixture into pan and put some oil on top.

Bake in a 350 degree oven for 1 hour until high, puffy and thoroughly set.
