Sunshine Bars
We started with the soft “Sunshine Bars” from the Laurel’s Kitchen cookbook. We’ve played around with the ingredients and have developed a simple, flexible list:
ingredients
- More or less:
- 1 cup liquid (like orange juice)
- 4 cups dry ingredients (whole wheat flour, oats, wheat germ, pumpkin seeds, flax seed, almond meal, powdered milk, etc.)
- 1 teaspoon cinnamon and/or nutmeg
- 1/2 teaspoon salt
- 1/2 cup sweetener (honey or agave)
- 2 cups dried fruit cut into small pieces (raisins, cranberries, apricots, apples, etc.)
- 1/2 cup oil
- We’ve tried adding bananas, applesauce, brown sugar, etc. and they always turn out well. And they’re easy.

Preheat oven to 350 degrees.

Heat liquids on stove top and add dried fruit to soften.

Mix honey and oil in a bowl. Add dry ingredients, cinnamon and salt.

Add liquid and dried fruit.

Mix well.

Press into an oiled 9“ x 13” baking dish.

Bake about 30 minutes.

Cool completely before cutting.
notes
We make double batches, wrap them individually and freeze them, taking out a few at a time to defrost in the fridge.
