Sunshine Bars

ErinErin

We started with the soft “Sunshine Bars” from the Laurel’s Kitchen cookbook. We’ve played around with the ingredients and have developed a simple, flexible list:

ingredients

  • More or less:
  • 1 cup liquid (like orange juice)
  • 4 cups dry ingredients (whole wheat flour, oats, wheat germ, pumpkin seeds, flax seed, almond meal, powdered milk, etc.)
  • 1 teaspoon cinnamon and/or nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup sweetener (honey or agave)
  • 2 cups dried fruit cut into small pieces (raisins, cranberries, apricots, apples, etc.)
  • 1/2 cup oil
  • We’ve tried adding bananas, applesauce, brown sugar, etc. and they always turn out well. And they’re easy.

directions

  • 1

    Preheat oven to 350 degrees.

  • 2

Heat liquids on stove top and add dried fruit to soften.

  • 3

Mix honey and oil in a bowl. Add dry ingredients, cinnamon and salt.

  • 4

    Add liquid and dried fruit.

  • 5

    Mix well.

  • 6

Press into an oiled 9“ x 13” baking dish.

  • 7

    Bake about 30 minutes.

  • 8

    Cool completely before cutting.

notes

We make double batches, wrap them individually and freeze them, taking out a few at a time to defrost in the fridge.
